How do I predict the bounces?

It's pure geometry. The angle it hits the wall is the exact angle it bounces off. Practice makes perfect.

Does the ceiling drop on a timer?

No, it drops based on how many times you shoot a bubble without making a match. Every time you miss, you lose a 'life', and when they run out, the ceiling lowers.
